Ingredients (for 1):

400-500g whole whiting

Ratatouille:
1 green courgette
1 yellow courgette
1 aubergine
Garlic
Thyme
Rosemary
Olive oil

Piperade:
1 peeled large red pepper
4 peeled tomatoes
1 cooked onion
4 cooked garlic cloves
Thyme
Pinch of sugar
Olive oil

Recipe:

1. Fillet the fish as shown in this reel, or ask your fishmonger to do this for you.

2. Piperade: blend bell pepper, tomatoes, onion, garlic, thyme, sugar and olive oil until smooth. Transfer into a pot ang cook gently for 1 hour.

3. Ratatouille: slice the veggies lengthwise on a mandoline, arrange on a baking tray with garlic cloves, thyme and rosemary. Coat with olive oil, season and roast at 160C for about 20-25 min. (take aubergine out 10 min earlier).

4. Arrange the roasted vegetables on top of the fish fillets (as shown in the video), season and roll them up. Secure with kitchen twine. Roast the fish at 160C for 15-20 minutes. Plate on a generous serving of the delicious piperade and enjoy! 🥳
