Bunny Chow with clarias catfish! This fish species is perfect for curries, so I took the liberty to recreate a delicious recipe by fellow chef Sepp.

“Fish Daddy Filleting Knife”: Savernake Knives

Ingredients (serves 2):
350-400g clarias catfish fillet
Flour for dusting
Frying oil
Curry:
1 cinnamon stick
2 star anise
2 bay leaves
1 tbsp coriander seeds
1 large chopped onion
2 minced green chillies
4 grated tomatoes
1 tbsp grated garlic
1 tbsp grated ginger
1 tbsp coriander powder
1 tbsp turmeric powder
1 tbsp garam masala
Pinch of chilli powder
Chopped chives or spring onions
1 brioche bun

Recipe:
1. Fillet the fish and cut into chunks as shown in this video.

2. Curry: infuse oil for a few minutes with cinnamon, bay leaves, anise and coriander seeds. Sweat onion and chillies, then add garlic and ginger, followed by the remaining spices. Pour in the tomatoes and simmer gently for about 45 minutes.

3. Coat the catfish chunks with flour and deep fry until slightly coloured. Transfer to the curry and mix carefully.

4. Slice the brioche bun in half and cut out a rectangular hole in the middle. Pour in the fish curry, sprinkle with chives and spring onions and enjoy!
