Ingredients (serves 4):
4 x 150g wolffish fillets
Mac n Cheese:
300g pre-cooked macaroni
25g butter
25g flour
500ml milk
250ml cream
Smoked paprika
Garlic powder
100g mozzarella
100g Leicester cheese
100g cheddar cheese
BBQ sauce:
250ml Coca Cola
125ml ketchup
85ml Worcester sauce
65ml soy sauce
125ml chicken stock
100g sugar
100ml honey
60ml vinegar
1 garlic clove
Thyme
1 tbsp mustard
1 tbsp tomato paste

Recipe:
1. Fillet the fish as shown in this reel.
2. BBQ sauce: combine all ingredients in a pot, bring to a boil, skim off the impurities and reduce by half. Strain and keep chilled.
3. Macaroni & cheese: make a roux, add the seasoning and incorporate the milk and cream. Fold in the cheese and add the pasta. Top off with some more grated cheese and bake until golden at 180C.
4. Bake the fish head at 250C until the skin starts to blister, about 20 minutes and grill the fish fillets in the meantime. Serve the barbecue sauce in a Coke can and enjoy!
