Carp
• 1kg+ whole carp
• tbsp smoked paprika
• 1 sliced lemon
• 150ml white wine
• Olive oil
Vegetable Macedoine
• 2 large diced potatoes
• 5 sliced heirloom carrots
• 2 sliced leeks
• 2 minced shallots
• 4 garlic cloves
1. Clean and prep the fish as shown in this reel.
2. Season the fish, rub in the smoked paprika and insert the lemon slices into the scored skin.
3. Combine all the vegetables in an oven dish, add olive oil, season and mix well. Place the fish on top and sprinkle with white wine and more olive oil.
4. Bake covered at 180C for about 30 minutes. Remove the lid and finish roasting at 200C for another 10-15 minutes. Try to enjoy!
