I love Mediterranean comfort food and nothing, and I mean nothing, beats crispy fried fish such as sardines, or on this case sprats! Served with a classic staple of Greek cuisine – traditional tzatziki and a drizzle of fresh lemon juice.

Ingredients (serves 4):
1kg fresh sprats
Flour for dusting
Frying oil
Tzatziki:
500g Greek full fat yogurt
1 large finely diced cucumber
2-3 grated garlic cloves
Freshly chopped diill
Freshly chopped mint
Splash of fresh lemon juice
Splash of white wine vinegar

Recipe:
1. Gut and clean the fish as shown in this reel.
2. Tzatziki: salt the cucumber and let sit in a sieve for about 1 hour to remove as much water as possible. Mix together with all the remaining ingredients.
3. Sprinkle a layer of salt onto your frying pan and arrange the sprats (dusted in flour) in a mesh-grid like pattern. Add the frying oil and fry over medium high heat for 4-5 minutes. Pour off the oil and flip the fish over. Finish frying for another 3-4 minutes, serve with the tzatziki and a lemon. Enjoy!!
