Ingredients (serves 2):
2 x 120-150g white fish fillets
Frying oil
Mayo from the supermarket
Gherkins
Capers
Parsley
Dill
Splash of lemon juice
2 brioche burger buns
2 slices of American cheese

Recipe:
1. Fillet the fish as shown in this reel.

2. Brush the fish skin against the scales to make them stand up a bit. Then place the fillet skin-side up onto a rack and baste with 200C hot oil until brown and crispy. Set aside.

3. Combine all the ingredients for the tartare sauce and lightly toast the buns.

4. Place a slice of cheese on a bun and melt it with a torch. Spoon over the sauce and place the crispy fish fillet on top. Enjoy!!
