Creamy vodka pasta recipe with pan fried shark steaks! Side note: although this recipe might be controversial, the daily legal catch limit for UK commercial fishermen is 45kg as bycatch.

Ingredients (serves 2):
2 x 150g shark steaks
Milk
200g penne or rigatoni pasta
1 minced shallot
3 crushed garlic cloves
1/2 tsp chilli flakes
100g tomato puree
75ml vodka
100ml double cream
30g grated Parmesan
Chopped basil

Recipe:
1. Fillet the fish as shown in this video.

2. Soak the shark steaks in milk overnight, then rinse and pat dry. Pan fry for 5-6 minutes over medium heat on each side.

3. Pasta alla vodka: start by boiling your rigatoni or penne according to package instructions, or until al dente.

4. Creamy sauce: sweat the shallots, add the garlic and chillies. Sweat down for a minute or two and add the tomato paste. Cook until the paste turns darker and deglaze with the vodka. Flambé, pour in the cream, add the grated cheese, basil and pasta. Plate with the shark and enjoy!
