Blini canapés are perhaps the most versatile dish for cocktail parties and pre dinner snacks. This recipe is a classic French take, that comes out perfectly fluffy and pairs incredibly well with caviar and smoked fish.

Ingredients (approx 24 blinis):
24 guppies or any fry-size fish
150g Greek yogurt
100g all purpose flour
1 egg
10g baking powder
Salt
Splash of milk
Black and red lumpfish roe
Crème fraîche

Recipe:
1. Gut the fish as shown in this reel. Arrange on a well oiled baking tray and roast in the oven for 15-20 minutes at 200C.

2. Blinis: mix together all the ingredients and chill for at least 1 hour. Transfer the batter into a piping bag and pipe 6 blinis at a time into a pan that’s been heated over medium low heat. Fry until golden brown, flip and finish cooking the other side.

3. Pop a bump of fish roe or caviar with some crème fraîche onto the blinis and top off with your roasted crispy fish.. Enjoy!!
